Try It: Guilt-Free Healthy Hot Cross Bun Muffins

It's coming into the time of the year where the smell of hot cross buns and chocolate filled sweet treats fills the air and suddenly you start making allowances or forgetting about your goals all together! Well not this year, this year you can smell the hot cross buns and eat them too!! (You just have to make them first!)
These may not be exactly the same texture as the real deal but they are delicious and will definitely hit the spot. They are refined sugar, grain and gluten free (very easily made dairy free too) and only take around 20-25 minutes to bake, perfect!!
Ingredients
- 1/2 cup coconut flour
- 1 1/2 cups almond flour
- 1/2 cup tapioca starch
- 1/4 cup coconut sugar
- 1tsp baking powder
- 1tsp baking soda
- 3tsp ground cinnamon (more if you want extra spice)
-1tsp ground ginger
- 1tsp ground nutmeg (1/2 tsp allspice if you don't have nutmeg works too)
- 200g Butter or coconut oil (melted)
- 4 eggs
-1/2 tsp vanilla extract
-1tbsp Honey (could use Maple Syrup instead)
- 1/2 cup raisins or saltanas (good quality ones!!)
- 1/4 cup dark chocolate chips (optional)
Instructions
1. Preheat your oven to around 200c fan bake & line a 12 cup muffin tray
2. Mix together the almond flour, coconut flour, tapioca flour, coconut sugar, cinnamon, ginger, nutmeg, baking soda and baking powder in a large bowl.
3. In a second bowl, whisk the eggs and add in the cooled melted butter (or oil if using), vanilla and honey.
4. Gently fold the wet mixture into the dry mixture until combined fully and then add in the dried fruit and chocolate (if using).
5. Evenly distribute into your baking tray and bake until a skewer comes out clean which should be around 18-20 minutes depending on your oven!
*If you want to add the white cross onto the top of the buns to give it more of a feel of the real deal, I use a mixture of cashew butter and honey whisked and then piped on top once they have cooled! You could also use whisked egg whites mixed with desiccated coconut or even just melt some plain cacao butter mixed with coconut sugar and drizzle over depending on your preference!
