Warm Kumara and Potato Salad Recipe

This Warm Kumara & Potato Salad is the perfect "bring your bestie" to any party or gathering.
INGREDIENTS
2 medium kumara (red, orange or purple, skin on) cut into 3cm chunks
2 medium potatoes (or carrots if you prefer)
2 cloves crushed garlic
4 teaspoons runny honey
8 rashers honey smoked bacon, chopped
3 - 4 good handfuls rocket and baby spinach leaves
2 Spring Onions, diced finely
2 oranges skin removed, segmented
1/2 cup walnuts or pine nuts chopped
Dressing
2 teaspoons wholegrain mustard
2 teaspoons liquid honey
Juice of 1 lemon (or 1 tsp white wine vinegar)
2 tablespoon extra-virgin olive oil
INSTRUCTIONS
1. Preheat oven to 180deg fan bake or (200degC normal bake)
2. Toss kumara and potato with a good sprinkle of olive oil and mix with honey and garlic before transferring to a roasting tray lined with baking paper.
3. Season with salt and pepper, and roast for 25-30 minutes or until cooked.
4. On a second baking tray, line your bacon and pop in the oven for the last 10-15 mins of roasting.
5. Put all dressing ingredients together in a bottle or jar and shake until combined. Season to taste with salt and pepper.
6. To serve, mix together the roasted veges with rocket, spinach orange, crispy bacon, spring onion and nuts with dressing.
